Called green beans in the USA, french breans in the UK. Some call it squeaky beans. Whatever you choose to call it, the term green bean spans over many different kinds of beans: common bean, yardlong bean, winged bean, and hyacinth bean. Green beans are also very similar to edamame beans. Anyway, here’s a short info on when can you eat it, and when not while on Dukan Diet.

A word of cautionDo not consume any uncooked (or improperly cooked) green beans. Raw green beans are rich in some sugar-binding proteins called lectins that can be harmful if consumed in excess.

Canned green beans is often high in sodium (this is the salt that has been added to the brine).

If you choose this variety of green beans make sure it is as low-salt as possible and limit the consumption to one or two servings a day (no more than 7 oz / 200 g).

Otherwise, choose fresh green breans and cook it (preferably without salt).

Another remarkDo not eat enormous amounts of green beans unless you are sure that the beans are young. When beans are getting mature they become less green (more like yellow) and become richer in fats and carbohydrates. You do not want too much of this kind of nutrients in the early stages of the Dukan Diet.

French Beans (Mature Seeds, Boiled without salt) Nutrition Data →

Though very high in dietary fiber and protein, mature-seed green beans are much higher in carbohydrates than we would expect.

This is the reason why you can’t eat mature-seed green beans until phase III.
